Humans can't digest the hooves or hair or bones, so there's no point in trying to eat them.

More tribal cultures have tried to use these 'wasted parts' as tools and the like in the past, with varying degrees of success... modern processes can take waste and find uses for it as well, but whether everything finds a use depends on if it's profitable to do so.

It's a simplification of the barter system. It makes it easier to get what you need, and makes it possible to create things that don't have a physical value, like sciences, or multimedia.
